video game question (MLB the show 09)

So I just started this franchise on MLB the show 09, and have been tinkering with the concession products and such. When looking at the prices and the number of stuff sold, I see this number under the "overhead" category. Can someone tell me what exactly overhead is? Is it supposed to be high or low? How do you get it to change the direction you want it to?

overhead is the cost to run a business. It is a fixed cost. It should include rental of the space, salaries of workers, uniforms, etc. I don't t think it can be adjusted.
