Favorite Dinner to Make For Yourself

My fiance is out of town and my plans fell through this weekend. I'm home with nothing to do and I feel like making myself a decent little dinner. I'm going to head over to the grocery store, but I don't know what I want. So I reach out to the smart people of Brewerfan to give me a few ideas..

 

What is your favorite meal to make and eat for yourself?

Sometimes it is nice to make a good steak for yourself. I am also partial to making some chicken stirfry, instant lunch for the next day!

That totally depends on what you like. Steak is always good. Make some asparagus or other veggie for a side and have a salad as well. Boom.

 

Or, get some boneless chicken breasts and some marinade. Pretty easy to make. Add a side.

Made my favorite dinner tonight.....grilled out and made steaks, sauteed mushrooms, onion rings and baby red potatoes cooked in foil on the grill. Soon, sweet corn will be added to this menu.

Grilled chicken myself, sliced potatoes in foil with onion and garlic, and corn. Isn't a true cookout without potato salad or cottage cheese, so we had the cottage cheese.

 

We use the Freshlike frozen corn. Anybody buy this stuff? Fresh as corn on the cob, I promise!!! It steams itself right in the bag and is great when you can't get ears of corn. Try it sometime.

Weirdos, I did make chicken, just not for me.

 

Cottage cheese is not for me, but I do love m some coleslaw (as opposed to potato salad).

skinless chicken strips on a tortilla with some peppercorn ranch, tomatoes and lettuce. it's a typical lunch for me.

 

otherwise i'll flatten out a piece of chicken, then bread and fry it into a schnitzel. then put it on a kaiser roll with some mozzarella cheese and some marinara sauce. it's one awesome sandwich. otherwise you could take the flattened chicken and roll it up with some cheese and slices of ham.

 

or ball up some sticky rice, black beans and tomato, add some cayenne and fry the things.

... I am also partial to making a nice salad for myself, maybe putting some chicken in it. I can make a mean salad.

Probably BBQ Nachos ... Not my favorite meal, but my skills in the kitchen reiterate the fact that I'm blessed to be married to someone who can cook quite well.

 

Yep. I can make meatball subs -- that is about my ceiling -- my wife certainly could make better ones, but refuses to.

I like to make baked burrito/enchilada things. You take one of those huge tortillas, and put refried beans and jalapeño peppers on it, then put browned ground beef made with taco seasoning on that, then sautee green pepper and onions in the same pan you made the beef in, then wrap the whole thing up like a burrito, but you put it in a pan, cover it in enchilada sauce and let it cook for a while. Then you take it out and grate cheddar cheese over the top, put it back in the oven and melt the cheese.

 

It's probably horrible for you, but really delicious.

 

 

Chicken soup is another really easy meal to make.

My girlfriend hates any spices that are hot so when she heads out of town I usually make something she wouldn't be able to eat. Most commonly penne pasta with vodka sauce (depending on how much prep time I have I sometimes make my own sauce). Then I add spicey italian sauasage, mushrooms, and pepperocini's to the sauce.

 

My other favorite meal I make is one I can't make just for myself and that is a pesto chicken sandwich. I buy chicken breasts and slice them into small strips and use a pesto glaze on them before pan frying them. Then add sliced moserella and roma tomatos and you are good to go. Typically use ciabatta bread if I can find it, but pretty much any hard bread will work fine.

 

Thankfully I can cook, because my girlfriend can make chipped beef on toast and that's about it.

My wife and kids were out of town as well, but I didn't get a chance to cook much. My daughter comes home tonite, so I am going to make some grilled chicken, rice and corn on the cob. Then we will walk over to the ice cream place for dollar cones.
